Red Beans and Rice

 

1 lb. Dried red beans

¼ lb. Cured ham (cut into small bite size pieces)

1 lb. Smoked sausage (cut into slices)

1 large onion (chopped into small pieces)

1 bell pepper (chopped into small pieces)

2-3 fresh green onions (chopped into small pieces)

Fresh parsley (2-3 sprigs chopped fine)

Salt

Pepper

Fresh crushed garlic (2-3 cloves)

Cayenne pepper

Tabasco sauce

 

Rice (cooked according to directions)

 

 

Cover beans in water and soak over night.

 

Drain and wash beans.  Combine beans, ham, sausage, onions, bell pepper, parsley and garlic in a large cooking pot and cover with water.  Add salt, pepper (black and cayenne), and Tabasco sauce to taste.  Cook until the beans are tender.  It may be necessary to add a little water occasionally until the beans are cooked.

 

Serve over the cooked rice.

 

Serves about 4-6 people.
